This is one of my favorite recipes because it contains no flour and no added sugars, making it perfect for my diabetic diet. Plus, it tastes great!
Ingredients:
- 1 ripe banana
- 2 large eggs
- Olive or coconut oil (for frying) or non-stick spray (if using a waffle maker)
- Maple syrup (for topping)
- Cinnamon (optional)
Instructions:
- Mash the banana: In a bowl, mash the banana until it becomes smooth with just a few small lumps.
- Whisk the eggs: Crack the two eggs into the bowl with the mashed banana. Whisk until the mixture is well combined and smooth. Add cinnamon for added taste if you choose.
- Cook the pancakes:
- For frying: Heat a non-stick pan over medium heat and add a little olive oil. Pour small portions of the batter onto the pan and cook for 2-3 minutes on each side, or until golden brown.
- For waffle maker: Preheat the waffle maker and lightly coat it with non-stick spray. Pour the batter into the waffle maker and cook according to the waffle maker's instructions (usually about 3-4 minutes) until golden brown.
- Serve: Top with maple syrup and enjoy!
