Banana and Egg Pancakes (no flour and no added sugar)

Banana and egg pancakes

This is one of my favorite recipes because it contains no flour and no added sugars, making it perfect for my diabetic diet. Plus, it tastes great!

Ingredients:

  • 1 ripe banana
  • 2 large eggs
  • Olive or coconut oil (for frying) or non-stick spray (if using a waffle maker)
  • Maple syrup (for topping)
  • Cinnamon (optional)

Instructions:

  1. Mash the banana: In a bowl, mash the banana until it becomes smooth with just a few small lumps.
  2. Whisk the eggs: Crack the two eggs into the bowl with the mashed banana. Whisk until the mixture is well combined and smooth. Add cinnamon for added taste if you choose.
  3. Cook the pancakes:
    • For frying: Heat a non-stick pan over medium heat and add a little olive oil. Pour small portions of the batter onto the pan and cook for 2-3 minutes on each side, or until golden brown.
    • For waffle maker: Preheat the waffle maker and lightly coat it with non-stick spray. Pour the batter into the waffle maker and cook according to the waffle maker's instructions (usually about 3-4 minutes) until golden brown.
  4. Serve: Top with maple syrup and enjoy!
